🍌🍯 RECIPE: Vegan Banana and Custard Pots 🍯🍌

These delicious dairy-free sweet pots are perfect for an energy-boosting breakfast or a simple sweet treat! Give them a try this weekend with this easy to follow recipe to make four pots.

You will need:
500ml non-dairy milk
2 tbsp cornflour
1 tsp vanilla extract
2-3 tbsp maple or agave syrup
Few drops vegan yellow food colouring
100g vegan granola
1 large banana, peeled and sliced
Mint sprigs, to decorate

Mix 6 tbsp of the non-dairy milk with the cornflour and vanilla extract in a jug to make a smooth paste. Gradually stir in the rest of the milk.
 
Pour the milk mixture into a medium saucepan and slowly bring to the boil over a medium heat, stirring all the time. The mixture will gradually thicken but keep stirring to prevent any lumps forming. Continue cooking over a low heat for 2-3 minutes until you have a smooth thick sauce. Stir in the maple or agave syrup and a few drops of food colouring to give a custard-yellow colour.

Divide half the granola and nearly all the banana slices between four small heatproof serving dishes. Spoon over the custard and top with the rest of the granola and banana. Decorate each pot with a sprig of mint and serve warm or cold.

Almond, oat, coconut or soy milk will all work well in this recipe!

It might have felt like winter was never going to end, but finally the sun is out and it looks like it's here to stay. Perfect for picnics in the park, at the beach or even enjoying at home. Here are top tips for perfect picnics:

🎒 Pack Plenty - Don’t get tunnel vision on the food aspect of the picnic. You need to remember suncream, a just-in-case waterproof, a warmer layer and of course a bag for your rubbish too. Don’t forget comfort items too – a couple of cushions will save you from pins and needles and an achey arm!

🎶 Lights, Music, Action! – As the nights get warmer you can extend your picnic trip into the evening with battery-powered LED lights and lanterns. It will provide a cosy atmosphere and you’ll be able to avoid the crowds by being out at off-peak times. Bluetooth speakers can be had for less than £30 and add to the enjoyment, but be mindful of others with your volume.

🎲 Don’t forget the games – Classics like rounders, cricket and frisbee are firm favourites out in the sun if you have the space, but otherwise why not bring a board game or a pack of cards for al fresco fun.

🍰 Try this easy all-in-one almond-flavoured sponge with a sweet and tangy rhubarb topping for a zingy taste of spring 🍰

You will need:
300g rhubarb, trimmed and chopped
25g icing sugar, plus extra for dusting
175g unsalted butter, softened, plus extra for greasing
175g caster sugar
3 large eggs
175g self-raising flour
1 tsp baking powder
50g ground almonds
1 tbsp milk

Preheat the oven to 180C/160C Fan/Gas Mark 4. Grease a 23cm square shallow cake tin and line the base and sides with baking paper. Toss the rhubarb and icing sugar together in a bowl and set aside.

Place the butter, caster sugar and eggs in a large mixing bowl. Sift over the flour and baking powder. Using a handheld electric mixer, beat for 2-3 minutes until smooth and creamy. Fold in the ground almonds and milk. You can add 1-2 tbsp drained and chopped stem ginger to the sponge mixture, if liked.

Turn the mixture into the prepared tin and gently level the surface with a palette knife. Scatter the rhubarb evenly over the top.

Bake in the preheated oven for 40-45 minutes or until the cake is risen and springy to the touch. Leave to cool in the tin for 10-15 minutes then transfer to a wire rack. Serve warm or cold dusted with icing sugar. It's also delicious served with cream or custard, or while enjoying a cup of tea or coffee.
